This coffee is a Gesha variety from the El Paseo farm in Buesaco, Nariño, Colombia, grown at an altitude of 1800 meters. It undergoes an advanced anaerobic fermentation process involving brewer's yeast musto and a 72-hour sealed tank fermentation without washing the mucilage, followed by temperature-controlled drying. The flavor profile is floral and aromatic, featuring notes of white flowers, bergamot, and peach, with a black tea-like body and a long, floral finish.
Black & White is the realization of barista champions Kyle Ramage and Lem Butler’s ambition to democratize elite‑level coffee. They manage a dedicated roastery since 2017, roasting four days per week.
