This coffee is a Bourbon Ají variety from Acevedo, Huila, Colombia. It is a washed coffee where cherries are depulped and fermented in open plastic tanks for 12 hours to enhance complexity through light oxidation before being washed. The flavor profile features notes of satsuma, rainier cherry, and lemon black tea. This specialty grade Arabica coffee is roasted by Heartwood Roastery.
Founded by Jim and Jacinda Sanders in 2014, Heartwood Coffee Roasters emerged from humble beginnings when Jim, a former plumber, began roasting coffee beans on their front porch and in their garage using a turkey fryer with a large wok, essentially "sautéing coffee."
