This coffee is a Yellow Bourbon variety grown at Miranda Farms in the Kaʻū region of Hawaiʻi Island. It is processed using an innovative anaerobic honey method, where cherries are fermented in oxygen-free tanks before being depulped and dried with mucilage intact. This light roast offers a vibrant and complex flavor profile featuring notes of lemon, cantaloupe, caramel, and roasted cashew. The cup is characterized by a silky, creamy body and bright, lively acidity, reflecting the unique volcanic terroir of the region.
