This single-origin coffee is a Yellow Bourbon variety from Finca El Diviso, located near Pitalito in Huila, Colombia, at an altitude of 1750 meters. Produced by Nestor Lasso, this lot undergoes a controlled yeast-inoculated natural process using Saccharomyces cerevisiae (T58) for 80 hours. The resulting cup is clean and floral, featuring distinct tasting notes of yellow plum, clementine, mango, nectarine, and a mint chocolate finish. It is recommended for both filter brewing and modern espresso preparations.
