The cherries undergo a 48-hour oxidation process followed by 72 hours of fermentation in plastic bags before natural drying. This process highlights the lactic and fruity character of the variety. The flavor profile features notes of strawberry, lemongrass, floral, cocoa, ripe pineapple, mandarin, and green apple, with a juicy body and citric-lactic acidity.
