The coffee undergoes a natural process involving 48 hours of oxidation followed by 72 hours of fermentation in plastic bags before drying. It features a complex flavor profile with notes of strawberry, lemongrass, floral tones, cocoa, ripe pineapple, mandarin, and green apple, characterized by a juicy body and citric-lactic acidity.
