The coffee undergoes a thermal shock anaerobic washed process, where cherries are bathed in hot water followed by a cold water plunge before fermentation with a yeast starter. This process results in a clean, sweet, and juicy cup with flavor notes of red berries, pomegranate, white grape, osmanthus, and melon.
