Founded in 2007 by Jared Rennie, the business began with small-batch roasting in his garage and expanded to a dedicated roastery and coffeehouse in Ashland’s Historic Railroad District by 2009. The company is committed to sourcing only certified organic coffee and cultivating long-term, transparent relationships with growers, often paying well above fair-trade prices to support sustainable farming and quality. Noble’s roasting style is designed to showcase the distinct character of each origin with balance and clarity.
