This coffee is a Red Catuai variety produced by fourth-generation farmer Yuki Minami in the Cerrado Mineiro region of Minas Gerais, Brazil. Grown at an altitude of 1145 meters across the Santo Antonio and Olhos D’Água farms, this lot is processed using the natural method. It offers a classic Brazilian flavor profile characterized by soft nuttiness, with notes of cashew and nougat, and a dried fruit finish. It is suitable for both straight espresso and milk-based drinks like macchiatos or cortados.

Mikey Rinaldo founded New Math Coffee in Chicago in 2020, bringing together his Indonesian heritage and passion for specialty coffee discovered during graduate school. After gaining experience roasting at Due South Coffee Roasters and Passion House, Rinaldo focused his roastery exclusively on specialty Asian coffees, importing quality robustas and libericas from Southeast Asia that are often overlooked in specialty markets.
