This coffee is a Gesha variety grown by Wilder Santacruz at his farm, Villa Sol, in Buesaquito, Nariño, Colombia, at an altitude of 1920 meters. The coffee undergoes a natural process involving a two-day controlled anaerobic fermentation in sealed barrels, followed by mechanical silo drying and patio finishing. It features a complex, expressive flavor profile with notes of orange soda, grape jelly, elderflower, and raspberry, complemented by a deep, rich finish reminiscent of pu-erh tea.
Have Fun Coffee was founded in Dartmouth, Nova Scotia, by Sonny and Luke Adamski as a sister operation to their established Good Luck Cafe. The roastery takes a deliberately accessible approach to specialty coffee, rejecting the solemnity that sometimes surrounds the craft in favor of straightforward enjoyment. Roasting is precise, using Cropster software with three thermocouples for exact temperature monitoring, and sourcing is ethically driven with a rotating seasonal lineup.
