This coffee is sourced from Chelbesa Washing Station in the Gedeb district of Yirgacheffe, Ethiopia, at elevations of approximately 1,925–2,110 meters. It is produced by around 615 smallholder farmers from plots of 0.5–2 hectares, using cultivars Welisho and Dega. The washed processing includes density grading, 72 hours of fermentation, channel washing, clean-water soaking, and slow drying on raised beds for up to 10 days, followed by hand-sorting. The region is known for a vibrant floral character and bright citrus notes in the cup.
Man Versus Machine is a Munich based specialty-coffee roastery founded in 2014 by Marco and Cornelia Mehrwald, roasting on site and operating several cafes in the city. The team favors light–to–medium, balanced and sweet roast profiles and offers omni profiles suitable for both espresso and filter brewing. Man Versus Machine sources from specialty suppliers and at times works with the likes of Nordic Approach to keep a rotating lineup of single-origin lots and blends. Some of their coffees have been transported sustainably by sail.
