About This Coffee

This coffee is a single-origin offering from the Chelbesa washing station in the Gedeb region of Ethiopia. Grown at an altitude of 1,950 to 2,100 meters, this lot consists of Dega, Walisho, and local heirloom varieties. It is processed using the washed method. The flavor profile is complex and fruit-forward, featuring distinct notes of stone fruit, black tea, and jasmine.

Calendar Coffee

Calendar Coffee is a specialty roastery in Galway, Ireland, founded in 2018 by Zarah Lawless and Daniel Boobier. The two met working at Workshop Coffee in London, where they observed that the best-tasting coffees were almost always the most recently harvested. That observation became the entire premise of their roastery. Calendar sources seasonally, buying green coffee close to harvest and rotating their offering throughout the year. A new roast drops every Wednesda, one week it might be a washed lot from Nyeri, Kenya, the next a natural from Huehuetenango, Guatemala. The roastery operates out of a former computer repair shop in Galway and has grown quickly. In 2023, Roastful ranked them the third-best roastery in the world, marking the only Irish name in the top ten. They've also partnered with Hometree, an Irish woodland charity, planting native trees in County Clare to offset their carbon footprint, with a stated goal of becoming carbon-negative.
