This Pink Bourbon variety coffee is grown by Marlon Bolaños at the Three Coffee Farmers farm in Acevedo, Huila, Colombia, at an altitude of 1670 meters. The coffee undergoes an anaerobic honey process, involving a 48-hour anaerobic fermentation in whole cherries, followed by pulping and another 48-hour anaerobic fermentation in mucilage, then 20 days of sun drying. The flavor profile is vibrant and tea-like, featuring notes of tea rose, pineapple, panela sugar, and oolong tea.
Black & White is the realization of barista champions Kyle Ramage and Lem Butler’s ambition to democratize elite‑level coffee. They manage a dedicated roastery since 2017, roasting four days per week.
