This coffee is a Sidra variety grown at La Rosita in the western foothills of the Andes, Ecuador. The region features a mild subtropical highland climate with cool temperatures and frequent cloud cover, which encourages slow cherry maturation. The coffee is processed by fermenting ripe cherries for 24 hours, followed by a second 12-hour fermentation with the mucilage intact, before being fully washed and dried in covered polytunnels. This results in an elegant, silky cup with a delicate floral character.
