This coffee is grown by Marlon Rojas at La Reserva farm in Pitalito, Huila, Colombia, at an altitude of 1720 meters. It is a blend of Pink Bourbon and Tabi varieties. The coffee undergoes an experimental co-fermented washed process, involving 72 hours of aerobic oxidation followed by 72 hours of submerged fermentation with stone fruits and panela. This results in a silky body with a flavor profile featuring notes of passionfruit, coconut, and peach. It is characterized by lively acidity and a clean finish, making it ideal for filter brewing.
