This coffee is a Gesha variety produced by José Joaquin Bolaños at Finca Villa Sofia in the San Agustín municipality of Huila, Colombia. Grown at an altitude of 1780 meters, this lot underwent a double fermentation process: cherries were fermented intact for 60 hours, de-pulped, and dry-fermented for another 40 hours before being dried in a parabolic solar dryer. The flavor profile features notes of jasmine, peach cream, and spun sugar.
