This coffee is a single-origin offering from Finca Paya, located in Concepción Huista, Huehuetenango, Guatemala, at an altitude of 1650 meters. Produced by Nery Pablo, this lot consists of Caturra and Bourbon varieties. It is processed using a traditional washed method, involving depulping and a 32-hour dry fermentation in parchment. The flavor profile is characterized by sweet pastry aromatics, apple acidity, and notes of pear, apple danish, toasted hazelnut, honey, pomegranate, and golden sultana, evolving into a vanilla-like, custard-cream sweetness as it cools.

Scenery Coffee Roasters

Scenery Coffee Roasters was founded in London in 2023 by a trio with a combined three decades of experience in the specialty coffee industry. They roast on a Loring S35, producing on set days and holding coffee in airtight bulk storage before bagging, a workflow designed around freshness and consistency. Sourcing is forward looking: Scenery works with importers to purchase coffee early while it is still at origin, releasing lots as they land in the UK. All furniture in the space is upcycled, and the approach to materials follows the same minimal intervention philosophy that guides the roasting. Scenery was named a Sprudge Notable Roaster for 2025 and won Sprudge Best Design/Packaging in 2024.
