This coffee is a Yellow Pacamara variety from the Villa Pastora farm in Palestina, Huila, Colombia, grown at an altitude of 1680 meters. It undergoes a unique yeast-inoculated natural process involving an initial oxidation period followed by anaerobic fermentation with saccharomyces cerevisiae yeast. The flavor profile is characterized by red-fruited notes, including red cherry and cara cara orange, with a hibiscus tea-like quality and a smooth milk chocolate finish. The coffee features a big, round body.
Black & White is the realization of barista champions Kyle Ramage and Lem Butler’s ambition to democratize elite‑level coffee. They manage a dedicated roastery since 2017, roasting four days per week.
