This coffee is from Las Lajas in the Central Valley region of Costa Rica, grown at 1450 meters altitude by farmers Francisca and Oscar Chacon. The coffee is processed using the Black Honey method, where the cherry peel is removed but the mucilage remains during drying, creating sweet and syrupy characteristics. The Las Lajas Micromill operates on organic farming principles and has been experimenting with processing methods since 2006. This is an SL28 variety coffee with flavor notes of boysenberry, dark chocolate, hibiscus, blueberry, and blackberry, with wine-like qualities. The roast level is light-medium.
