The roastery sources exclusively from small traceable farms, roasting specialty grade coffee multiple times per week to guarantee maximum freshness, with each package hand packed before it leaves the facility. Their roasting philosophy centers on bringing out the natural flavors of each coffee without unnecessary intervention or over roasting, an approach that has earned respect among Florence's baristas and coffee professionals. D612 supplies notable Florentine establishments including Simbiosi, Melaleuca, and Brac, building a quiet but growing presence in a city where traditional espresso culture still dominates. The roastery sees coffee as a tool of connection between farmer, roaster, and consumer, with transparency and sustainability guiding every sourcing decision.
