This decaf coffee is produced by Elias and Shady Bayter at El Vergel Estate in the Tolima region of Colombia at 1750 meters altitude. It is a Caturra variety processed using a unique watermelon-infused honey method, followed by Swiss Water decaffeination. The cup profile is expressive and fruit-forward, featuring notes of pink gatorade, kiwi, and a refreshing mojito-like finish with cooling citrus mint. This light roast offers a deeply sugary, candy-like presentation with a bright, effervescent quality.

Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
