This coffee is a Castillo variety from the Cauca region of Colombia, grown at an altitude of 1,960 meters. It is processed using a washed method with special fermentation. The flavor profile features notes of lychee, soft peach, and a syrupy strawberry aftertaste, with aromatic hints of sweet osmanthus and vanilla. It offers a juicy acidity and an elegant, tea-like texture.
Founded in 2020 in Sumida-ku by Machi Kodama and Sho Takanaka, ou·bai·tou·ri takes its name from a four-character Japanese idiom (桜梅桃李) meaning cherry blossom, plum, peach, and apricot, an expression that each should be valued for its own character. Kodama won the 2023 1st Crack Coffee Challenge roasting competition. The roastery focuses on light roasts with fruit-forward profiles, sourcing seasonal lots and emphasizing the inherent flavors of each origin.
