This coffee is a Gesha variety produced by Demóstenes Tantaleán Acuña in the Tacabamba region of Cajamarca, Peru, at an altitude of 1,950 meters. It is processed using an anoxic washed method, where cherries are de-pulped and fermented in a controlled anoxic environment for 36 hours before being washed and solar-dried. The flavor profile is characterized by floral notes of cherry blossom and jasmine, complemented by the juicy sweetness of Pink Lady apple and a warm, pastry-like quality reminiscent of Bakewell tart.
