This coffee is from Dehong, Yunnan, China, cultivated as Catimor P4 (7963) at 1,700 meters. The 2024 crop was processed using a yeast fermentation honey method. Tasting notes include peach tea, lychee, butterscotch and oolong tea, with pronounced sweetness, bright acidity and low bitterness. The honey process yields an elegant, balanced finish suitable as an entry-point Yunnan single-origin.
Founded in 2020 in Sumida-ku by Machi Kodama and Sho Takanaka, ou·bai·tou·ri takes its name from a four-character Japanese idiom (桜梅桃李) meaning cherry blossom, plum, peach, and apricot, an expression that each should be valued for its own character. Kodama won the 2023 1st Crack Coffee Challenge roasting competition. The roastery focuses on light roasts with fruit-forward profiles, sourcing seasonal lots and emphasizing the inherent flavors of each origin.
