It undergoes a unique double-fermentation washed process, involving 30 days of fermentation in bags before and after de-pulping, followed by drying on raised beds in a greenhouse. The flavor profile features notes of lime, caramel, and cotton candy or hard candy, characterized by sweet, floral qualities and crisp, juicy malic acidity.
