This coffee is a Geisha variety sourced from small producers in the La Plata region of Huila, Colombia, at altitudes between 1,600 and 1,900 meters. The coffee undergoes a unique processing method involving an initial 12-hour aerobic fermentation, followed by a co-fermentation stage where a peach concentrate and proprietary solution are added to the beans. This results in a vibrant, perfumed profile with distinct flavor notes of peach yoghurt, candied mandarin, and elderflower, offering a creamy and complex cup.
