Produced by a community of smallholder farmers, the coffee is processed using a washed method, where cherries are depulped, fermented, and dried on raised beds or patios. This medium-light roast offers a flavor profile featuring notes of red grape, dried fig, turbinado sugar, and strawberry jam.

Ruby Coffee Roasters

Jared and Deanna Linzmeier started Ruby Coffee Roasters in late 2013, roasting their first batches from a garage in rural Portage County, Wisconsin. Jared, a former Intelligentsia apprentice who had worked in Los Angeles, Portland, and Seattle, returned home to build something rooted in the same care for sourcing and craft he had learned in those cities. Ruby is named after Jared's grandmother. The roastery is certified organic and focuses on direct trade with small scale producers and cooperatives, prioritizing long term partnerships that support economic and environmental sustainability at origin. Food & Wine named Ruby Wisconsin's best roaster in both 2018 and 2019, and the company has also earned Good Food Awards and a Wisconsin Innovation Award. From that garage to a purpose built facility in Nelsonville, the ethos has stayed the same: thoughtful sourcing, careful roasting, and a quiet confidence in letting the coffee do the talking.
