The cherries are harvested at over 24° Brix and undergo a complex process involving hydraulic selection, a 48-hour closed bioreactor fermentation, pulping, and a secondary 72-hour fermentation with specific microorganisms. The beans are then dried on African beds for 30–40 days. The flavor profile is bright and dessert-driven, featuring notes of lemon tart, honey, chamomile, and brown sugar.
