It undergoes a unique blackberry co-fermentation process, involving a 24-hour oxidation stage, a 48-hour submerged fermentation with yeast and blackberries, and a 76-hour drying period. The resulting cup offers a complex flavor profile with distinct notes of blackberry, honeysuckle, and grape.
