This coffee is a Sidra variety from Farm Betania, located in the Palestina region of Huila, Colombia. Grown at high altitude by producer Maria Rodriguez, the coffee is cultivated in a biodiverse ecosystem under a canopy of fruit trees. It is processed using a washed method, involving a 30-hour fermentation period followed by careful drying on canopy beds. The flavor profile features sparkling acidity, bright citrus, tropical fruit, and white florals, complemented by a creamy body, juicy malic acidity, and subtle spicy and chocolaty undertones.
