This coffee is a Sidra variety grown at the Las Margaritas farm in Bruselas, Huila, Colombia. The coffee undergoes a complex processing method involving an initial 36-hour oxidation, followed by pulping and an 80-hour anaerobic fermentation, and finally a controlled temperature water wash. This process results in a cup characterized by sweet citrus notes and complex spice undertones. The farm is managed by Edilberto and Diego Vergara, who have focused on specialty coffee production since 2006.
