This coffee is from the Al-Khanshali Estate III in the Haraz region of Sana'a Province, Yemen, grown at an altitude of 2000 meters. It consists of Udaini and Ja'adi varieties and undergoes an anaerobic slow dry process over four days. The flavor profile is complex and layered, featuring notes of dark chocolate, strawberry, cinnamon, orange marmalade, pear, nectarine, peach, and mango. The coffee is processed by sorting cherries by density, followed by a controlled anaerobic fermentation in oxygen-free bags and a slow, gentle drying on raised beds.
