This coffee is a natural processed selection from the Durato village in the Bombe Kebele of the Bensa district, Sidama, Ethiopia. Grown at an altitude of 2,050 meters by 626 smallholder farmers, this coffee features the 74110 and 74112 varieties. It is a light roast that offers a vibrant, fruit-forward profile with tasting notes of berry compote, blueberry, peach, and milk chocolate, characterized by a rich, rounded sweetness.
Travas Clifton founded Modcup in 2013 and has built its reputation on experimental processing. Features include anaerobic fermentation, thermal shock washing, and co-fermentation with ingredients like dehydrated fruits or hops. These techniques produce intensely fruity, floral coffees that sit firmly on the adventurous end of specialty.
