This coffee is produced by Sebastián Ramírez at Finca El Placer in the Quindío region of Colombia at an altitude of 1700–1800 meters. It is a Castillo variety processed using an advanced co-fermentation method involving anaerobic fermentation with wine yeast, dehydrated strawberries, and fruit glucose. The flavor profile is characterized by intense notes of cooked strawberry, grape candy, and peach, with a smooth, sweet finish reminiscent of milk chocolate.
Black & White is the realization of barista champions Kyle Ramage and Lem Butler’s ambition to democratize elite‑level coffee. They manage a dedicated roastery since 2017, roasting four days per week.
