This coffee is a Pink Bourbon variety from the Pitalito region of Colombia, grown at an altitude of 1750 meters. Produced by the Asosatus association, the cherries undergo a short 12-hour anaerobic fermentation followed by a washed process. The beans are dried on patios for 24 days. This coffee offers a flavor profile featuring notes of red berries, orange, honey, and chamomile.
Harmony Roasters began in 2021 when Dani sold his motorbike to buy a one kilogram capacity roaster. Together with his partner Agatha, who handles photography, social media, and the web presence, Dani built a micro roastery in Montcada i Reixac on the outskirts of Barcelona. His approach favours minimal intervention, letting the coffee's natural character come through rather than imposing a heavy roast signature. It paid off quickly: Dani won both the Catalan Coffee Roasting Championship and the Spain Roasters Championship in 2021, then took the Catalan title again in 2022. The roastery uses fully compostable packaging and supplies several businesses around Barcelona.
