This coffee is produced by Norman Canales at Estate Los Angeles in the Pueblo Nuevo region of Dipilto, Nicaragua, at an altitude of 1300 meters. It is a washed coffee featuring a blend of Parainema, Typica, and Bourbon varieties. The beans undergo a 24-30 hour fermentation, followed by a 3-day sun-drying period and an additional 18-21 days of shade drying. The flavor profile includes notes of cherry, cacao, black tea, and fig.
Geoff Polci, a certified Q Grader whose coffee journey spans two decades, founded Stereo Coffee Roasters in Toronto in June 2018. Polci first roasted coffee in 2004 at a restaurant in Costa Rica and went on to run a series of cafes and co own another roasting company before launching Stereo. The roastery focuses on sustainable, traceable coffees from single farm producers, with a particular commitment to sourcing from women and Indigenous communities.
