This specialty coffee is produced at Finca Bethania in the Macuelizo area of the Nueva Segovia region, Nicaragua. The coffee is of the Java variety and is processed using a dry anaerobic method, where cherries are fermented in sealed tanks for 48 to 72 hours before a two-stage drying process. This filter-roasted coffee offers a flavor profile featuring notes of dried cranberries, nougat, and white tea.

RepublicThis Ostrava based family roastery was founded in 2017 by husband and wife duo Petr and Marie, who previously worked as baristas at Berlin's Five Elephant cafe. What started as a small family business with dad roasting and mom tasting while the kids watched has grown to a team of over 10 people with a Prague showroom opening in Bubenč. They roast on an American made five pound Diedrich IR-5 roaster with quality as their number one priority, offering regularly rotating harvests from around the world. Their Mothership espresso blend has become beloved by baristas and home enthusiasts for its full creamy body and milk chocolate flavor.
