This coffee is a single origin from El Diviso farm in Huila, Bruselas region of Colombia at 1750 meters altitude. The variety is Yellow Papayo, processed using an advanced natural method with complex fermentation protocols including 36 hours oxidation in cherry, 24 hours anaerobic fermentation, additional 24 hours oxidation, and 48 hours submerged fermentation, followed by thermal shock and mechanical drying with rehydration techniques.
