This coffee is sourced from the Chiapas region of Mexico, grown at an altitude between 1100 and 1350 meters. It is a blend of Marsellesa, Typica, and Caturra varieties. The coffee is processed using a washed method and decaffeinated via the ethyl acetate (sugarcane) process. The beans are dried for 8-10 days on patio and petate mats. This is a medium-light roast coffee.
