This coffee is a Geisha variety from The Three Coffee Farmers in Acevedo, Huila, Colombia, grown at an altitude of 1,670 meters. It undergoes a double fermentation washed process, involving 48 hours of cherry fermentation followed by 48 hours of washed fermentation. The roast level is light, resulting in a cup with a silky, tea-like body and a flavor profile characterized by notes of jasmine, raw honey, and lemon. This coffee is noted for its transparency, delicate floral sweetness, and clean finish.
Travas Clifton founded Modcup in 2013 and has built its reputation on experimental processing. Features include anaerobic fermentation, thermal shock washing, and co-fermentation with ingredients like dehydrated fruits or hops. These techniques produce intensely fruity, floral coffees that sit firmly on the adventurous end of specialty.
