The coffee is processed by selecting only ripe cherries, which are then fermented for 12 hours, de-pulped, and fermented in tanks for approximately 30 hours. After washing, the beans are dried on covered airflow canopy beds for 16 to 24 days. The cup profile is juicy and sweet, featuring notes of peach and red apple with a bright lime-like acidity.
