This is a naturally processed coffee from Hambela. The production involves meticulous selection of cherries, with 85% perfectly ripe at harvest. After harvesting, cherries are submerged in water to remove floating fruit, then soaked for 4 hours. The coffee is slowly dried on raised beds for 35 days in the shade, allowing for controlled fermentation and development of an exceptional flavor profile.
