The Bombe region of Sidama is grown at 2,250–2,400 meters above sea level. The processing method is anaerobic natural, where cherries are fermented in oxygen-deprived tanks and then dried on raised beds to preserve fruit character and sweetness.
Geoff Polci, a certified Q Grader whose coffee journey spans two decades, founded Stereo Coffee Roasters in Toronto in June 2018. Polci first roasted coffee in 2004 at a restaurant in Costa Rica and went on to run a series of cafes and co own another roasting company before launching Stereo.
