This single-origin coffee from Timaná, Huila, Colombia is grown at 1700 meters altitude and processed using an advanced natural method. Geisha variety cherries sourced from Oporapa are floated to remove imperfections, then undergo 72 hours of natural fermentation followed by partial drying on raised beds. After 12 days, they are rehydrated and introduced to proprietary beer and wine yeast for controlled fermentation in stainless steel tanks before final drying. Fruit-forward with tropical characteristics including cherry popsicle and mango sorbet notes, complemented by floral aromas of orange blossom and rose, finishing with chocolate.
Black & White is the realization of barista champions Kyle Ramage and Lem Butler’s ambition to democratize elite‑level coffee. They manage a dedicated roastery since 2017, roasting four days per week.
