This Ethiopian coffee is sourced from the Danche Washing Station in the Chelbesa region of Gedeb, Gedeo. Produced by approximately 800 smallholder farmers at an altitude of 2200 meters, this lot consists of Kurume and Wolisho varieties. It undergoes a natural process that includes a 3-day dry fermentation before being dried on raised beds for 16-21 days. The roast is light, offering a flavor profile characterized by notes of blueberry grunt, lavender, lemon, and dark chocolate. It is suitable for various brewing methods including pour-over, Aeropress, and espresso.
Have Fun Coffee was founded in Dartmouth, Nova Scotia, by Sonny and Luke Adamski as a sister operation to their established Good Luck Cafe. The roastery takes a deliberately accessible approach to specialty coffee, rejecting the solemnity that sometimes surrounds the craft in favor of straightforward enjoyment. Roasting is precise, using Cropster software with three thermocouples for exact temperature monitoring, and sourcing is ethically driven with a rotating seasonal lineup.
