This coffee is a Pink Bourbon variety from the La Estrella Farm in the Popayan region of Cauca, Colombia, grown at an altitude of 1850-2100 meters. It undergoes a complex, innovative processing method involving co-fermentation with raspberry, passion fruit, and coffee mossto, followed by carbonic maceration. The flavor profile is vibrant and fruit-forward, featuring notes of passion fruit, raspberry, cherry, and strawberry, with a syrupy, lingering aftertaste. This light roast coffee is suitable for various brewing methods.
