The Caturra variety is processed using an innovative Nitro Washed method where parchment coffee is fermented for 4 days in tanks with nitrogen and yeast under controlled temperatures, then washed and naturally dried for 20-30 days. The nitrogen accelerates fermentation, creating a distinctive fruit-forward profile with notes of melon, golden kiwi, watermelon, guava, and strawberry. The coffee delivers a sweet and juicy cup with complex fruitiness that evolves with temperature changes and aging.
