Colombia Nestor Lasso Ombligon is a single-origin coffee from the Huila region, grown on the El Diviso farm. The bean varietal Ombligon is processed via an experimental, multi-stage fermentation including oxidation, anaerobic fermentation with recirculated cherry leachates, and a thermal shock. Flavor notes include grape, lemongrass, and basil, with a medium, sparkling body. Best enjoyed as a filter coffee (pour over); espresso yields an intense cup.
