The coffee undergoes a complex, multi-stage sequential fermentation process, including 200 hours of anaerobic fermentation in a bioreactor with added microorganisms. This meticulous processing is designed to build fruit sweetness and preserve the full flavor potential of the beans. The resulting cup is expressive, featuring notes of berries, chocolate, and floral characteristics.
