This coffee is produced by María Belén Díaz at the Resinas farm in the Acevedo region of Huila, Colombia, at an altitude of 1,800 meters. The Pink Bourbon variety undergoes a semi-washed anaerobic honey process, including a 24-hour pre-fermentation in cherry and a 36-hour anaerobic fermentation in bags. The beans are dried on raised beds for 15 days. This coffee offers a vibrant and complex flavor profile with distinct notes of citric acid, floral, green apple, green tea, and tangerine.
